Meet the Beauty Experts

Nutrition: Carrie Latt Wiatt
Perry Hagopian
FIRST LADY OF NUTRITION: Carrie Latt Wiatt

HER MOTTO: Practice portion control. Wiatt's three books all focus on learning to eat reasonable amounts of food; she blames Americans' expanding waistlines on an inability to distinguish between "satisfied" and "stuffed."

HER GET-SLIM STRATEGY: Wiatt's L.A.-based Diet Designs helps clients learn to eat proportionally via a food-delivery service that brings just-the-right-size meals to your home. (If you don't live in California--or if you're a celebrity filming in, say, Mexico--they'll FedEx your meals to you.)

WHAT TO DO WHEN YOU FALL OFF THE WAGON: "I'm human, too, and I don't always stick to my eating plan. But don't let one slip-up blow your whole day." So, you ate two donuts at breakfast? Make up for it with a healthy lunch.

TO LOOK LIKE A WIATT CLIENT:
*Do breakfast. "When I wake up, I drink a liter of water. It helps cleanse your system." She then eats plain yogurt ("the probiotics in it are a must for your digestive system") mixed with berries and whole-grain granola.
*Never go four hours without consuming something. Some good choices: seven to 10 raw almonds, a nectarine, or low-fat string cheese.
*Limit starch. Although she's not against any vegetable per se, Wiatt advises eating small portions of the starchier varieties, such as corn, potatoes, and peas.

HAS WORKED WITH: Jennifer Aniston, Julia Roberts, former Miss USA Shanna Moakler.
