I had the most awesome summer. I hiked the Great Wall of China.

It was absolutely incredible. What about you?

Yeah, I also had a great summer. I basically spent every day and night in my den gluing collectible antique stamps into my grandpa's notebook.

Really? I don't think anybody wants to hear about your stamp collection. Sorry.

It had penguins on it. It was a very nice stamp.

Yeah. I really love this place. Can I just show-- can I-- can I just get the cameras to show this-- this space?

It's actually a really cool space 'cause over here, we have, basically, this is the kitchen and bar. So, this is where Chef Tom Colicchio cooked lunch with Rachel a little bit earlier on. You're gonna be seeing that in just a moment. It's also where you can swing by and have a nice, refreshing, delicious Diet Coke. You can also hop online. You can surf the Web at-- at the Yahoo! Internet Cafe here. If you're getting a little bit peckish, then it's always possible to grab a bite to eat at the automat where you can grab either a tasty sandwich or some other delicious snack. What have got in there at the moment? Something like chocolates and stuff. It's great. And of course, you can just kick back, read a magazine, hang out with friends as these people are, I suppose, you guys have got the ringside seats here for a performance by Jewel. It's gonna be amazing. It's gonna be intimate and it's gonna take place right on this stage in just a moment. And, of course, you folks at home are also invited to see that. So, stick around. I-- I like that. That's my favorite, actually. That's-- aren't I gorgeous?

Oh my god, so much. What is that? I-- I was just having a little bit of fun. Don't let an Australian near a camera. Anyway, let's just get the show started. Here is a guy who is the picture of good taste, unlike some other people around here. It's our first guest, renowned Chef Tom Colicchio. Let's get to know him. Take a look. As the culinary mastermind behind such restaurants as Gramercy Tavern and Craft, Tom Colicchio is one of today's most celebrated chefs. Since 2001, his family of Craft Restaurants has brought simple elegance to dining across the country. And in 2003, Tom introduced a new spin on the standard sandwich shop with Witchcraft--a restaurant that now has 11 locations in New York alone. In 2006, Tom stepped out of the kitchen and into the limelight to become the head judge on Bravo's hit reality show "Top Chef"--a role he's enjoyed now for 6 consecutive seasons. But it's his time away from the kitchen and spotlight that brings him the most joy. He's an avid fisherman, a family man, and a self-made musician who sizzles on any stage. And now that you have met the man, let's check out his culinary magic. Earlier today at the Diet Coke Pop-Up Kitchen right here, he practically broke a sandwich-making world record, didn't he?

He sure went for it but all for a good cause, of course, and I was the lucky girl who got to help. Here's a look back at my healthy and delicious lunch date with Tom Colicchio. Tom, thank you so much for being here today.

Sure, Rachel. How are you doing?

Good, thanks. So, what brings you to our Diet Coke Pop-Up Kitchen?

Well, you know, a-- a few things today. First, we're-- we're here sort of doing some demonstrations, talking about healthy eating. The first 250 people coming off the street are gonna get sandwiches. But more importantly, we're working with City Harvest to-- to do about a thousand sandwiches and give them to some of New York's neediest.

Right.

So, that's-- that's, you know, the-- that's the feel good part of today. Without Diet Coke's help, we couldn't do that. So, it's a-- it's a-- makes us all feel pretty good.

We're very happy to be a part of that.

Cool.

Now, I've been to many of your Craft Resto-- Restaurants which are incredible.

Thanks!

Amazing. But you've branched out sort of into Witchcraft--

Witchcraft, yeah, yeah.

which is sandwiches.

Sandwiches, yeah, uh huh. Well--

So, tell me what inspired that sort of transition to--

You know, as-- as a chef, half of our meals we eat standing up because you're in the kitchen, you're working around, and you have all your mise en place, your-- you prep food and you grab a piece of bread and just, you know, shove whatever you can there and you stand up and keep prepping and-- and eating. So, I think chefs, you know, in general, if you ask them their favorite thing, most of them will say sandwiches. And so-- so we decided that that I might as well share some of our favorite sandwiches that we make while we're standing up in our kitchens eating--

Yeah.

with-- with the public. It's a lot of fun. It is.

Amazing. Well, congrats on that success.

And I see we have some amazing ingredients here today.

We do. Again, we're focusing on-- on healthy eating.

Yes.

You know, too often I think people, they equate healthy eating with-- with diet food and-- and bland food. And we wanna show that you can-- you can eat healthy but also get a lot of flavor to food.

Right. What are some things you recommend in terms of, like, eat well, live well, stay healthy, that, you know, you can still have a great sandwich?

Yeah. Again, using the things like fresh herbs and vinegars to get a lot of flavor in there, cut out a lot of the animal fats like butter and things like that. Use olive oil in-- in place of-- of some of the animal fats. But really it's just that finding great ingredients, you know, treat them pretty simply and-- and just preparing a sandwich.

And what are we making today?

Well, we have a-- a sandwich that we're gonna make with caponata. So this is roasted peppers, onions, some pie nuts, raisins, a little vinegar, olive oil, and we're gonna pair that with mozzarella, some roasted egg plant.

Delicious!

And then one of my favorites: white marinated anchovies.

I just have not yet been able to anchovies.

We're gonna--

I'm all scared.

At the end of the day-- no. Don't-- don't be afraid. It's your friend.

Really?

Yeah, you'll love it. Yeah.

Okay. I'm not sure but coming from you, I'll trust you.

Okay. So the sandwich will start with a little bit of, sort of a caponata. It's onion and roasted peppers, a little olive oil and some vinegar. There's also pie nuts and raisins in here. Now, we have some egg plant and this is just simple. It's just been scored and then roasted in-- in olive oil.

Right. Are these all things that people could do at home?

Oh, this is simple. This is--

Sort of on an economical budget?

Yeah. This is egg plant, which is pretty cheap egg plant, and some olive oil, which is kind of sauteed where the-- the egg plant acts like a sponge and sort of absorbs all that olive oil, and then we some-- some mozzarella cheese. This is some fresh mozzarella.

That's delicious.

Yeah. Okay. Now, I would put the anchovies on here right now but I-- I know you don't want that. Can I sneak some in? Can we try it?

Can I taste it first without?

Okay. We'll taste it without.

Maybe I'll get my guts by the end of the segment.

Oh, look over there.

I love it. Well, have you shared your love of cooking with your sons?

Well, my--

You have one baby but you have a 16-year-old.

My-- my 7-- my 7-week-old is-- is focused on what mom can do in the kitchen, sort of, and my 16-year-old actually loves food. Yeah.

Oh, that's great. Were you making like PB&Js for your kids all the time?

He-- he likes, you know, anything that we sort of-- we have a rule in our house. You have to try it. So, you have to try the anchovies before you reject them. How's that?

Okay. Can I try my sandwich?

Sure. Try your sandwich.

I'm very excited and all those people are very lucky to be able to get sandwiches from you today. Like that?

No, that's right. Turn-- turn it aside.

Turn it?

Turn it. Turn it. No, this way. This way. Okay, right there.

Oh, the mozzarella.

Yeah.

That's--

No, no, no, no. The other corner, the other corner, right there.

Am I not doing it right?

No, right there in that corner. I need you-- I need you to eat that corner right there.

Yes. I'm gonna sit down with singer-songwriter Jewel. She'll be performing live right here.

So, if you're hungry for it, then we've got it cooking.

All right, give it up.

So without further ado, allow me to tell you a little more about the singing star of our show, Jewel. We may be just across the street from the famed New York jeweler, Tiffany's, but today the "Style Series" welcomed a jewel of our very own. Jewel is an award-winning singer-songwriter whose vocal stylings took the music world by surprise. Jewel's first album, "Pieces of You", recorded when she was just a teenager in 1995, made an unexpected splash in the world's of pop and alternative rock, especially her breakthrough hit "Who Will Save Your Soul". It was the start of a multi-platinum career. The next single, "You Were Meant for Me" sped up the charts.

I know that you love me and soon you will see that you were meant for me...

And Jewel would go on to sell some 27 million records worldwide. Last year, she cut her first country album and it promptly shot to number 1 on the country chart. Then again, Jewel really is a little bit country. Her husband is none other than Hall of Fame Rodeo Cowboy Ty Murray and small town Texas is where they call home. She's also an actress, an accomplished writer, and poet, and more. These days, she's touring to promote her latest album, "Lullaby", which features, not surprisingly, Jewel's interpretations of some familiar bedtime songs as well as some original folk tunes that are musical jewels of Jewel's very own. So let's now turn our attention to center stage where Rachel is with the lovely, the talented, Jewel. Rach?

Thanks, Josh. Jewel, thank you so much for being here.

Now, not only do you have one of the most gorgeous voices I've ever heard, like an angel--

Thank you.

but you've been writing your own songs since you were a teenager. How much of your life experience has gone into that?

Pretty much all of it. I really am fortunate I found writing at a young age. I think it really helped out a hard childhood and I think turning to writing helped me deal with it and assimilate it, and I think it made me now where I never did drugs, which can only be a good thing.

Yes, absolutely. Well, considering how much you went through in your life.

Yeah.

It's definitely a huge accomplishment. Now, one of your biggest first singles, "Who Will Save Your Soul"--

Uh huh.

at 16, did you write that while you were hitchhiking--

Yeah.

up and down the coast? Tell me about that a little.

Yeah. I decided to hitchhike through Mexico when I was 16 like all parents hope their children will do one day.

Yeah. Most kids are, like, running off to the night club. They're, like, down to Mexico.

Yeah. Yeah. I don't recommend it but I hoboed by train across the country and then I crossed the border in San Diego, and I just tried writing lyrics about really seeing America for the first time, the lower 48. Alaska is obviously part of America but we were so far removed. It was really neat to see the lower 48 and be part of pop culture and just see. It caused me to write a lot of lyrics and that's what made me write "Who Will Save Your Soul".

Right. And what do you think, at that point in your life, really pushed you and inspired you to become such a successful artist, you know, everything that you've sort of went through within Alaska and travelling and struggling and stuff?

Yeah. I never meant to, honestly. I wrote just because it made me feel better. It was like medicine for myself and when I was homeless, I went back to singing 'cause that's what I was raised doing and I was just trying to get by and survive. And amazingly, people liked my original songs and-- and I just got a local following and I got discovered. So, I never really meant to. It was sort of a surprise to me that people would care about my-- my type of music.

Well-- well, it's incredible.

Uh huh.

Now, you're known for several genres, I mean, folk music, pop music, but you also have a number 1 country album last year. Does that anything to do with country husband of yours, Mr. Ty Murray?

No, I've been writing a lot of these songs. Some of these date back to some of the earliest songs I've ever written actually. I was raised on a ranch in Alaska and I've always loved storytellers. So, Loretta Lynn, and Merle Haggard, and Gram Parsons were some of my favorites, along with Joni Mitchell, and Neil Young, and Bob Dylan. I love people with a strong perspective that wrote about their life. And so, that's what I wanted to do. And so, my influences are really varied and that's always been that way in my music, so it tends to have a lot of different styles.

Right. I love that and I love seeing you in "Dancing With The Stars" and you were, like, so supportive in the front row every time. That's amazing.

It was amazing for me to see him go through that process. And I was glad people got--

We were all rooting for that rodeo guy.

He's a-- he's such a hard guy to get to know. He's very quiet and shy. And so, I was really glad America got to get to know his personality 'cause he's a standup guy.

Right. Now, with both of your demanding schedules, your touring, your recording, you know, you don't always live in LA, how do you sort of balance everything? What-- what makes it all happen for you?

For me, it's just about, you know, knowing what your priorities are. My career is amazing. I feel so lucky to do it but isn't everything to me, and so turning down stuff so that you can have a life is really important. I tour in 2-week bursts so that I can be home. I've started working on projects that allow me to be in Texas more. We live on a ranch.

Right.

So that's a big help right there. I can go be in the spotlight and then just go be in the ranch by ourselves.

Right. Also, I mean, touring can be a very hectic schedule. You're busy. Like, what do you do on the road to sort of stay healthy, stay focused, stay sane?

I think wanting to is the first step. You know, I've never been a partier luckily, so I'm not out all night, you know, getting into trouble. And just making sure you get up, and exercise and, you know, try and eat good and just committing to doing it.

Excellent. Now, you've sold over 27 million albums, which is unbelievable.

I mean, did you ever think, you know, years ago that this would happen to you?

No. It surprised me. Even when I got signed to a label, I thought I'd have a small following. I was hoping to be like John Prine or something like that where I'd have a devout, hopefully, fan base and it got a lot bigger than I ever thought it would.

Right.

And it's lasted, you know, a lot longer than I thought it would.

Yeah. How do you say your music has evolved over the years? Do you feel like it's changed as you've changed as a person?

Hopefully, yeah. I mean, I've grown and-- and changed a lot. I care a lot about the craft. A lot of songwriters get worse as they get older, but novelists do the opposite. They tend to write their best work in their 50s, and I took that to heart, and really tried to learn from that, and make sure I was writing better, which means, you know, reading and making sure of staying curious, and learning, and honing your craft everyday.

Right. So, what kind of touring do you like to do?

I did this little 2-week-- 2-week bursts and it's great. I'll do 14 shows in 14 days. I'll just sing every single night and then I go home, and I'll take a couple of months, then I'll go do it again, and it's a great way to tour. It's a lot better than for me being out for years at a time.

Right. And you know, one of the things that I think is brilliant about you is-- you is that you're so brilliant acoustically--

It's fun.

which I think in this age of music is a huge accomplishment. So, how is it for you to perform somewhere in an intimate environment like this Diet Coke Pop-Up Kitchen?

I love it. Being in small environments is probably one of my favorites 'cause I like to talk and tell stories and--

Right.

and just be alone with my guitar. It's a lot of fun.

You're brilliant at it.

I'm from Queens, New York.

You're actually from Queens originally?

I'm probably one of the only few that are born and raised from Queens.

I was gonna say you're the one. You're the one New Yorker who's actually born here.

Well, the one New Yorker, yeah.

Me and everyone else who don't like 8 million people who are all from somewhere else. Now, are-- have you been a Jewel fan forever or is this a recent thing?

Oh, forever.

Uh huh. What's your favorite song?

Oh, we'll see.

No, this is my first time. I've waited so long for this. I'm super excited.

Thanks. I hear the clock, it's 6 a.m. I feel so far away from where I've been. Got my eggs and my pancakes, too; got my maple syrup, everything but you. I break the yolks and make a smiley face. I kinda like it in my brand new place. I wipe the spots off of the mirror. Don't leave the keys in the door. Never put wet towels on the floor anymore 'cause dreams last so long even after you're gone. And I know that you love me and soon you will see you were meant for me, I was meant for you. Everybody, when momma talk, put a cup of coffee but it didn't wanna talk. So I picked up a paper, it was more bad news, more hearts being broken or people being used. Put on my coat in the pouring rain, saw a movie it just wasn't the same. It was happy, I was sad. It made me miss you so bad 'cause dreams last so long even after you're gone. Thanks, Adrian. I wrote a lot of these lyrics probably when I was about 18 while I was homeless. I'm not really proud of this but I shoplifted for a very short time. It started with carrots, which apparently are the gateway vegetable. And suddenly, I was like, "What am I doing? This is a bad thing to start." So, I never stole anything again and I started to write these lyrics about if you watch what your hands do, you can see what your life's gonna become and I started writing the lyrics to "Hands", or what would become "Hands". And amazingly, my life did turn around and years later, my husband and I were camping in the mountains of northern California in 2001. We came out of the mountains on September 14th, I think, and we saw the flags at half mast and we couldn't figure out what was going on. And we finally got out of the mountains enough to get radio reception and we started seeing all these signs saying "God bless our country" and we finally got radio reception and caught up to the news that, you know, the Towers had fallen and we had been attacked by terrorists. And we were sitting there just driving in shock with the rest of the world. And a DJ came on the radio and he dedicated this song that I had written for myself at such a dark time in my own life and dedicated it to all the New Yorkers in America at such a dark time in America's life. So, it's my pleasure to get to sing this for you. This is called "Hands". If I could tell the world just one thing, it would be that we're all okay. Not to worry because worry is wasteful and useless in times like these. I won't be made useless. I won't be made idle with despair. Gather myself around my faith for light does the darkness most fear. My hands are small, I know but they're not yours, they are my own. They're not yours, they are my own. They are never broken. Poverty stole your golden shoes. It did not steal your laughter. And heartache came to visit me but I knew it wasn't ever after. And we will fight, but not out of spite. So moving, so amazing. Thank you for sharing that. Now, you have a new album, which is very excited, called "Lullaby."

Tell me about that.

It's my first independent release. I got to make it at the ranch. I built a studio and got to produce it myself. I've been writing--

Isn't it nice no one telling you what to do?

It was really fun, I gotta say, and it's basically songs that I've written over the course of my career to help myself relax.

Right.

I don't sleep very good and I've always had a hard time just being stressed and nervous especially I moved out when I was 15.

Right.

And I wrote a song called "Raven" which is on there and I wrote "Angel Standing By" while I was homeless and I thought if I'm adult and I like lullabies, basically there must be other adults who would like that. So, I put together a mood album basically. It's for people that wanna come home and relax after a stressful day of work and parents say their kids love it, too, so that's nice.

Great. It's on my top list. We all need a little de-stress--

Yeah.

at the end of the day. And any other projects that we should know about that you're working on?

Gosh. You know, I'm starting to work on designing a jewelry line. I've been drawing it. That's been really fun.

Love.

I've been working on designing a kids program. I've been drawing cartoons, which has been a blast. It's been a really creative period.

Great and we'll look out for that. And we are lucky enough that you're gonna play one more song for us.

Yeah.
