2 inch piece of lemongrass, coarsely chopped (reserve the stalk for garnish)
1 wedge of lime
2 oz orange vodka
In a cocktail shaker, muddle 5 blackberries, the chopped lemongrass and the lime wedge until well mashed. Add the vodka, fill with ice and shake vigorously for 30 seconds. Strain into an ice filled collins glass, top with tonic and garnish with a blackberry speared with the lemongrass stalk.

1/2 ripe fresh peach, diced
8 fresh mint leaves
1 tsp superfine sugar
2 oz straight Bourbon
Fill a goblet with crushed ice and 5 of the mint leaves. In a cocktail shaker, muddle the peach, 3 mint leaves and sugar until well-mashed. Add the Bourbon and fill with ice. Shake vigorously for one minute. Strain into the goblet and garnish with peach slice.
