The Lifesaving Green Wrap

Think you can't fit eating well into your workweek? Think again. Three highfliers from the fitness and nutrition worlds serve up make-ahead recipes they always have in stock.

As cofounder of the Earth Tu Face organic skincare line and the herbalist behind The Village Farm in Concord, California, Marina Storm's diet depends on what's growing in her garden or available at her local farmer's market. To stay healthy all year long (even between back-to-back cross-country flights), she relies on her green wrap. "This is a lifesaver for busy people. Super-quick and nutritious—it's gluten-free and vitamin-rich—you can stuff the wrap with any vegetables and herbs that you have on hand. When I want a protein kick, I add some smoked salmon, hummus, or roasted chicken."

The Lifesaving Green Wrap

Large green leaves, like collards or kale

⅓ cup chicken breast, smoked salmon, or hummus

¼ cup chopped fresh herbs

½ avocado, sliced

1 cup fresh greens

⅓ cup sliced, seasonal vegetables like tomatoes, cucumbers, grated carrots, radishes, and red onions

2 tbsp. sauerkraut

A squeeze of fresh lemon juice

Sea salt and pepper to taste

Lay out the leaves and assemble your ingredients onto them. Squeeze some fresh lemon juice all over to wake up the flavors. Add salt and pepper to taste. Wrap up like you would with a tortilla.
